We released this week a limited bottling of The Portage™ Illinois straight single malt whiskey. This is our second release of a straight single malt whiskey distilled and bottled at Quincy Street Distillery, since we released Golden Prairie™ two years ago. The Portage™ Straight Single Malt Whiskey is distilled from 100% malted barley and aged two years in a small oak char 4 barrel. We made just 15 cases in 375ml bottles at 45% alcohol by volume, available only at the distillery Speakeasy and Retail Shop. Golden Prairie™ used malts from its namesake alt bier, and was aged in barrels with heavier toast but lighter char. The heavier char used for The Portage provides a more “American” character to the whiskey. Note, we will not release another single malt whiskey for a year, when we plan to again release Golden Prairie™.
